Roasted Brussel Sprouts with Bacon

It seems like people have extreme opinions about brussel sprouts--they either LOVE them, or absolutely hate them... Bacon, however, is universally adored. This recipe brings these two ingredients together in a way that you'll absolutely love! These roasted brussel sprouts with bacon are full of flavor, and are covered in a sweet glaze that will make you forget that you're eating vegetables.

These brussel sprouts pair great with almost any main dish, and so does this roasted cauliflower recipe. My roasted garlic bread is another great option to round out a meal. You'll have to give both of them a try!

How to make Roasted Brussel Sprouts with Bacon

First, preheat the oven to 400° Fahrenheit, line a baking sheet with tin foil, and spray it with cooking spray. The tin foil isn't necessary, I just thinks it makes it easier to clean the pan!

Next, thoroughly rinse the brussel sprouts, and slice them in half. If they are really large brussel sprouts, cut them into quarters. If you can, buy smaller brussel sprouts--they usually have better flavor! Also, make sure to use fresh brussel sprouts rather than frozen. Toss the brussel sprouts with olive oil, salt, pepper, and minced garlic. Spread them out in a single layer on the baking sheet so they cook evenly.

Next, cut the uncooked bacon into small chunks--use kitchen scissors, it's much faster! I like to remove the majority of the fatty pieces, but that's totally up to you. Spread the bacon pieces over the top of the brussel sprouts, and put them in the oven for 20 minutes.

Next, whisk together the balsamic vinegar, brown sugar, dijon mustard, and honey to make the glaze. Take the brussel sprouts out of the oven after 20 minutes, and drizzle the glaze over the top. Use a spatula to mix everything on the pan, making sure that you coat the brussel sprouts well. Then, bake the brussel sprouts for another 8-10 minutes, until they are tender and starting to brown.

Ingredients

  • 2 lbs fresh brussel sprouts
  • 2 tablespoon olive oil
  • 2 teaspoon minced garlic
  • 1 teaspoon fine sea salt
  • ¼ teaspoon ground black pepper
  • 4 slices uncooked bacon

Glaze

  • 3 tablespoon balsamic vinegar
  • ¼ cup brown sugar
  • 2 tablespoon dijon mustard
  • 1 tablespoon honey

Instructions

  • Preheat oven to 400° F. Line a baking sheet with tin foil, spray it with cooking spray and set aside.
  • Wash the brussel sprouts and slice them in half (in quarters if they are large). Toss them with the olive oil, sea salt, minced garlic, and ground black pepper until well coated. Spread them out in a single layer on the baking sheet.
  • Cut the uncooked bacon into small chunks, removing any pieces that are only fat. Spread the chunks of bacon over the top of the brussel sprouts. Bake for about 20 minutes.
  • In a small bowl, whisk together the balsamic vinegar, brown sugar, dijon mustard, and honey. Once the brussel sprouts have cooked for 20 minutes, remove them from the oven and drizzle the glaze over the top. Using a spatula, stir around the brussel sprouts until they are evenly coated in the glaze. Make sure the brussel sprouts are spread out in an even layer, and bake for another 8-10 minutes, until they are tender and starting to brown.
  • Remove the brussel sprouts from the oven and serve immediately. Enjoy!
