Preheat oven to 400° F. Line a baking sheet with tin foil, spray it with cooking spray and set aside.
Wash the brussel sprouts and slice them in half (in quarters if they are large). Toss them with the olive oil, sea salt, minced garlic, and ground black pepper until well coated. Spread them out in a single layer on the baking sheet.
Cut the uncooked bacon into small chunks, removing any pieces that are only fat. Spread the chunks of bacon over the top of the brussel sprouts. Bake for about 20 minutes.
In a small bowl, whisk together the balsamic vinegar, brown sugar, dijon mustard, and honey. Once the brussel sprouts have cooked for 20 minutes, remove them from the oven and drizzle the glaze over the top. Using a spatula, stir around the brussel sprouts until they are evenly coated in the glaze. Make sure the brussel sprouts are spread out in an even layer, and bake for another 8-10 minutes, until they are tender and starting to brown.
Remove the brussel sprouts from the oven and serve immediately. Enjoy!
