Mom's Slow Cooker Chicken Tortilla Soup

Ingredients

  • 2 cup low sodium chicken broth
  • 2 shredded rotisserie chicken breasts
  • juice from 2 clementines (or mandarin orange)
  • 2 can (28 oz) petite diced tomatoes (56 oz total)
  • 1 can (15 oz) corn, drained and rinsed
  • 2 can (15 oz) black beans, drained and rinsed
  • 1 white onion, diced
  • 1 cup any red salsa
  • 1 tablespoon lime juice
  • 1 ½ tablespoon minced garlic
  • ½ teaspoon ground cayenne pepper
  • 2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

Toppings (optional)

  • sour cream
  • shredded cheese
  • sliced avocado
  • hot sauce
  • additional lime juice
  • tortilla chips or strips
  • fresh cilantro

Instructions

  • Add all of the ingredients to a slow cooker and stir well.
  • Cover and cook on LOW for 6-7 hours, or on HIGH for 3-4 hours.
  • Serve with your favorite toppings and enjoy!
