Mom's Slow Cooker Chicken Tortilla Soup
Ingredients
- 2 cup low sodium chicken broth
- 2 shredded rotisserie chicken breasts
- juice from 2 clementines (or mandarin orange)
- 2 can (28 oz) petite diced tomatoes (56 oz total)
- 1 can (15 oz) corn, drained and rinsed
- 2 can (15 oz) black beans, drained and rinsed
- 1 white onion, diced
- 1 cup any red salsa
- 1 tablespoon lime juice
- 1 ½ tablespoon minced garlic
- ½ teaspoon ground cayenne pepper
- 2 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 ½ teaspoon fine sea salt
- ¼ teaspoon ground black pepper
Toppings (optional)
- sour cream
- shredded cheese
- sliced avocado
- hot sauce
- additional lime juice
- tortilla chips or strips
- fresh cilantro
Instructions
- Add all of the ingredients to a slow cooker and stir well.
- Cover and cook on LOW for 6-7 hours, or on HIGH for 3-4 hours.
- Serve with your favorite toppings and enjoy!
